This soup is great for using up and veg and turning it into something tasty instead of throwing it away and you can alter it to suit what you have.
Ingredients
- Knob of unsalted butter
- 1 Onion chopped
- 1tsp Coriander seeds (optional)
- 3 Carrots chopped
- 3 Sticks of celery
- 2 Medium potatoes chopped
- 1tsp Coriander dried or 1tbsp fresh
- 1litre Water
- 1 Chicken Stock Cube
Method
Melt the butter in a pan and sauté the onion and coriander seeds.
Add the carrots, potatoes and celery into the pan and sauté on a medium heat for 10 minutes.
Add the water, crumbled stock cube and coriander into the pan. Bring the soup to the boil then simmer for 10-15 minutes until all veg is soft.
Leave the soup to cool then pour into a blender and whizz.
Enjoy!
This is similar to one I like to do but I hadn’t ever thought about adding coriander seeds. Will have to do this the next time I make one. Xxx
