Chicken and Lentil Soup

This recipe serves 4 and was a huge hit with our fussy toddler. The whole meal cost us only a couple of pounds to put together as the majority we already had in the cupboard! It’s cheap, easy, healthy and tasty. Enjoy!

  • 1 Onion, Chopped
  • 2 Chicken Breasts, Cubed
  • 1 tsp Cumin
  • 2 Garlic Cloves, Finely Chopped
  • 1 tsp Turmeric
  • 1.5 litres Cold Water
  • 1 Chicken Stock Cube
  • 1 Tin Chopped Tomatoes
  • 100g Green Split Peas
  • 120g Red Lentils

 

Method

PhotoGrid_1433575512849 (1)Fry the chopped onion and cubed chicken in 1 tablespoon of oil for five minutes. Add the cumin, garlic and turmeric and fry for a further minute.

Pour the cold water into a large pan along with the chicken and onion mixture. Add the stock cube and bring to the boil. Once it is boiling add the chopped tomatoes and green split peas, then reduce the heat and simmer for 10 minutes.
